We are going global again! We've reached out to our friends in the culinary community and have invited them to Vancouver. Five of the world's culinary best will be in our city for a series of delicious collaborations with some of our own city's top talent.

As far as unique dining venues go, the Vancouver Aquarium is one of a kind. A newcomer to the Vancouver World Chef Exchange, the Aquarium will transform its café into a unique pop-up bistro and play host to two top chefs from Canada and Ireland. Diners can expect a culinary match made in heaven as Ned Bell, Ocean Wise Executive Chef, welcomes JP McMahon, culinary director of EatGalway Restaurant Group, which comprises of Michelin-starred Aniar Restaurant , award-winning Spanish restaurant Cava Bodega, and Eat Gastropub.

From the West Coast of Ireland to the West Coast of Canada, diners will be taken on a gastronomic journey that marries the rich flavours of each region during a five course dinner. You can expect to toast to the coasts as well, with beer and wine pairings that will give a nod to the brews and bottles for which each country is known.

Guests will also have an opportunity to explore the magic of the Vancouver Aquarium at night, with full access to the galleries following prior to dinner.

The Vancouver World Chef Exchange, presented by Aeroplan, is a project initiated and produced by Tourism Vancouver, and supported by Air Canada and the Westin Bayshore hotel. The exchange shares Vancouver's culinary story with the world, and brings the world's great restaurant cities closer together by sharing ideas, experiences and talents through collaborative dining experiences.

About Chef Ned Bell

Long-time sustainable seafood ambassador Ned Bell is the Ocean Wise executive chef at Vancouver Aquarium. Bell's cooking philosophy is globally inspired and locally created. His love of sport, travel and adventure have taken him around the world, creating memorable experiences and cooking up a storm along the way.

With the support of the Aquarium's Ocean Wise program, Bell founded Chefs for Oceans in 2014 to raise awareness about sustainable seafood by riding his bike across Canada. Bell's dedication to sustainable seafood has inspired many Canadian chefs to get involved in the cause - a movement that is having a meaningful impact on the way consumers think about the seafood they eat, where it comes from and how they, too, can help protect our oceans by making ocean-friendly seafood choices.

Recently honoured with the 2015 Green Award for Sustainability by Vancouver Magazine and as a finalist for the Global Seafood Award for Advocacy at the 2015 Seaweb Seafood Summit in Malta, Bell's diverse British Columbia upbringing instilled a passion for fresh and locally sourced cuisine.

He has experience working in some of the country's top kitchens and was, most recently, executive chef of Four Seasons Hotel Vancouver and YEW seafood + bar, a proud Ocean Wise partner. Bell's diverse background includes seven seasons on Food Network Canada's Cook Like a Chef and he has been recognized as Canada's Chef of the Year at Food Service and Hospitality magazine's 2014 Pinnacle Awards, Best Overall and Rising Star by Where magazine and Top 40 Foodies Under 40 by Western Living magazine in 2008.

About Chef JP McMahon

JP McMahon is a chef, restaurateur and author. He is culinary director of the EatGalway Restaurant Group, which comprises of Michelin-starred Aniar Restaurant , award-winning Spanish restaurant Cava Bodega, and Eat Gastropub - which has inspired his next cookbook Gastropub Revolution. He also runs the Aniar Boutique Cookery School. JP is committed to the educational and ethical aspects of food, to buying and supporting the best of local and free-range produce, and engaging directly with farmers and producers.
JP is the founder and plays host to one of the biggest and most talked about international food events in Europe, Food On The Edge. The inaugural event took place in Galway in October 2015 with 2016 already causing stir. The event features the best international chefs from across the globe. The Edge 2015 won Food Event of the Year by John and Sally McKenna and received worldwide recognition.

Director, founding and current chair of the Galway Food Festival, JP is an ambassador for Irish food and a network leader for the global Cook it Raw project. He is also the ambassador for Spanish food in Ireland in particular promoting the wines of Rías Baixas (Galicia) and Jerez. JP is currently a commissioner for Euro-Toques Ireland and sits on its Food Council.
