    Our 10th annual Vancouver World Chef Exchange! We’ve reached out to our friends in the global culinary community and have invited them to Vancouver. The result? The world’s culinary best join us for a series of delicious collaborations with our own city’s top talent. Each pairing involves MICHELIN Guide recognized teams, from Bibs through to Stars, each set to be a unique dining experience found nowhere else but here.

    Join Executive Chef Roger Ma and the Michelin-recommended team at Boulevard Kitchen & Oyster Bar in welcoming Wilfrid Hocquet, Executive Chef and Co-Founder of Margo, Bangkok’s acclaimed modern bistro already earning international attention and poised for Michelin distinction in 2026.

    Chefs Roger Ma and Wilfrid Hocquet first cooked together almost two decades ago at Restaurant Daniel in New York City, one of America’s most storied Michelin-starred kitchens. This collaboration marks their first time cooking together since 2009, bringing their global journeys full circle as they reunite in Vancouver for a single exceptional culinary event. 

    This 6-course menu showcases a shared foundation in modern French cuisine while drawing on Wilfrid’s international culinary chapters and Roger’s evolution in shaping Boulevard into one of Canada’s top dining destinations.  Guests will enjoy a welcome course, two courses by each Chef plus a collaborative dessert.  Elegantly plated and globally inspired, this menu offers a rare glimpse into the chefs’ combined experiences from Vancouver to Bangkok and beyond.

    About Chef Wilfrid Hocquet

    Originally from Montpellier, France, Wilfrid Hocquet trained in some of the world’s most renowned kitchens, including Le Jardin des Sens (3 stars) and Louis XV – Alain Ducasse (3 stars) in Monaco, before moving on to lead Michelin-starred restaurants in France, Monaco, Paris, and Thailand.

    He opened Blue by Alain Ducasse, earning a Michelin star in its first year, and in 2025 co-founded Margo, a modern bistro in Bangkok that has already gained international acclaim. His cooking reflects classical mastery, global technique, and contemporary creativity.

    About Chef Roger Ma

    Born and raised in Vancouver, Roger began his career as a cook by helping launch Fifty Two 80 Bistro at Four Seasons Whistler Resort in 2004. After spending almost two years at the property, Roger felt the need to move to New York City to hone his craft in one of the most renowned kitchens in America. In the fall of 2005, Roger spent two weeks staging in Boulud’s kitchen and after was offered a full time position.

    From 2006-2012, Ma rose through the ranks at Chef Daniel Boulud’s two Michelin star flagship restaurant, Daniel in New York City and in 2011 he took the role of corporate sous chef in Boulud’s Dinex Group and later helped open Café Boulud and dBar at the Four Seasons Toronto as well as Maison Boulud at the Ritz Carlton in Montreal. In 2014, Roger returned to his hometown of Vancouver to help open Boulevard Kitchen & Oyster Bar where he is currently Executive Chef. The restaurant as been on MICHELIN Guide’s Recommended list for Vancouver since 2024.
