Our 10th annual Vancouver World Chef Exchange! We’ve reached out to our friends in the global culinary community and have invited them to Vancouver. The result? The world’s culinary best join us for a series of delicious collaborations with our own city’s top talent. Each pairing involves MICHELIN Guide recognized teams, from Bibs through to Stars, each set to be a unique dining experience found nowhere else but here.

Supported by Air Canada and The Westin Bayshore, VancouverELEM is honoured to welcome Chef Lucas Trahan, Chef de Cuisine of Chicago’s acclaimed Two-Michelin-Star Ever, for an exclusive one-night dinner with Chef Vish Mayekar.
Chef Lucas is widely recognized for his refined technique, pastry-driven creativity, and disciplined approach to flavour. Rising through the ranks at Ever — first as pastry chef and now leading the kitchen as Chef de Cuisine — he has become known for his ability to craft dishes that are precise, expressive, and deeply memorable. His work reflects a balance of artistry and restraint, where every element has intention and clarity.
Ever, the restaurant he helps lead, is one of Chicago’s most celebrated tasting-menu destinations — a modern, design-driven space built around seasonality, structure, and detail. Chef Lucas’ influence is central to that experience, shaping the restaurant’s evolution and its continued two-Michelin-star acclaim.
For this collaboration, Chef Lucas and Chef Vish are creating a multi-course tasting menu that merges their distinct styles.

About Chef Lucas Trahan

Lucas Trahan became Ever’s Chef de Cuisine in October 2023. Previously, he was Ever’s pastry chef from 2020-2023. Trahan worked with Chef Duffy at Grace from 2015-2017 and worked on the culinary teams of Entente, Fulton Market Kitchen and Pacific Standard Time. Trahan attended the Art Institute of Dallas and was named a Rising Star Pastry Chef in 2021 by StarChefs.
About Chef Vish Mayekar
With roots in Mumbai, India and a heart now deeply entrenched in Vancouver, Canada, Chef Vish Mayekar has honed his craft with over a decade of culinary excellence at the young age of 32, culminating in a prestigious diploma from Niagara College, Ontario.Vish’s passion for wine education led him to pursue WSET certification, elevating his expertise in pairing fine vintages with exquisite cuisine. His talent and charisma shone bright on Season X of Food Network’s Top Chef Canada, where he captivated audiences as a fan favorite, proudly representing British Columbia.
Previously, Vish’s culinary journey at The Fitzpatrick Family Vineyards and at Banda Volpi Group (Caffe La Tana, Pepino’s, Elio Volpe) highlighted his love for West Coast produce, wine, and global cuisine. This synergy of flavours and expertise have been further refined through his travels, innovative spirit, passion for creation.In addition, as a global ambassador of gastronomy, Vish is also Executive Chef and Culinary Program Director at The American Pavilion during the annual Cannes Film Festival in the South of France.
And now, a lifelong dream takes shape. As chef-owner of ELEM, a Michelin Guide-recommended restaurant, his goal is to push the boundaries of cuisines with his signature use of global spices from around the world, paired with local ingredients.
