    Our fifth annual Vancouver World Chef Exchange! We’ve reached out to our friends in the global culinary community and have invited them to Vancouver. The result? Five of the world’s culinary best join us for a series of delicious collaborations with our own city’s top talent.

    Named one of Vancouver's best locally owned restaurants, WildTale, and it's Executive Chef Francisco Higareda, are excited to welcome famed Chef Guillermo González Beristáin from Monterrey, Mexico, winner of Latin America's 50 Best Restaurants. This once-in-a-lifetime collaboration dinner will include a multi-course menu that celebrates the bounty of land and sea, with a twist. Each perfectly prepared course will be paired alongside tequilas, mezcals, and local & international wines. This dinner is not to be missed.



    About Executive Chef Francisco Higareda

    Chef Francisco Higareda is the Executive Chef at WildTale, award-winning restaurant in Vancouver that celebrates ingredients from farm and field. Hailing from Mexico and after obtaining his Certificate of Culinary Arts in Mexico City, he went on to complete his diploma in High Cuisine & Gastronomic Management at Mariano Moreno Institute in Buenos Aires, Argentina.  

    Chef Francisco continued to hone his craft when he moved to San Sebastian, Spain, to work in three-Michelin star Restaurant Arzak before moving to Paris, Francis, in 2003 to work in two-Michelin star restaurant, L’Atelier.   After working in France, he added Chef Owner to his resume, when in 2015 he opened two restaurants in Chihuahua, Mexico, Gourmet Classroom and Tapas & Tintos.

    In 2017, Chef Francisco moved to Vancouver and joined The Flying Pig and WildTale family.  He is proud to bring his passion and skills to the Vancouver dining scene.


    About Chef Guillermo Gonzalez Beristain

    Originally from Ensenada, Baja California, Chef Guillermo showed from an early age interest in the

    kitchen. He worked for years in Michelin-starred restaurants like “Jaún de Alzate” in Madrid, “Table Gourmand” in Strasbourg and “Troutbeck” of New York.

    In 1994 he took the position of chef at the Ambrosía restaurant in Mexico City and subsequently corporate chef of the Ambrosía del Bosque Group. With his mind set on creating his own restaurant, in 1998 he decided to open Pangea, place that revolutionized the restaurant industry in Monterrey; which has currently managed to remain for six consecutive years in the list of the “50 Best Restaurants of Latin America ”, by S. Pellegrino & Acqua Panna.

    With great determination and effort, Pangea was evolving to the creation of "Grupo Pangea", which currently consists of ten restaurants. (Pangea, Bardot, Chinolatino, La Félix- Nuevo Sur, La Embajada, Vasto, La Reynita, Libertad and 7th Street)

    In 2004, he decided to start his Mariatinto wine project and was recently awarded the “Chef Choice Award” for the Latin America’s 50 Best Restaurants (2016) and “Lifetime Achievement Award by The Diners Club (2017).

    In 2014 and 2015, he took the position of president within the Parallel Collective, group of chefs and professionals of Northeast gastronomy who have participated in the transformation and growth of regional cuisine. Currently, it is part of the Diplomatic Corps of Cooks of Mexico, which seeks to promote gastronomy Mexican all over the world. In 2016 and 2017, he participated as a juror in reality “Top Chef México” show produced by Sony Mexico.
