COFU Chinatown is part of COFU, a Vancouver-based Japanese dining brand offering a refined, plant-based interpretation of Japanese cuisine.
Rooted in traditional Japanese culinary values, the experience is guided by seasonality, Japanese techniques, and deep respect for ingredients. Rather than beginning with veganism as a concept, the cuisine evolves naturally toward a plant-based expression through simplicity, balance, and careful craftsmanship.
The menu centers on vegetables, grains, seaweeds, fruits, and fermented elements—prepared without imitation meats or substitutes. Each course highlights the ingredient itself, allowing subtle flavours, textures, and aromas to unfold.
We offer one of Canada’s first fully plant-based omakase experiences at an intimate counter, with thoughtful attention to taste, temperature, pacing, and presentation. Entirely plant-based, the experience is designed to resonate with anyone seeking a calm, modern way to enjoy Japanese dining. -
