Proposed Three-Course Menu
Starter
Arugula salad with citrus vinaigrette and shaved Parmesan, served with a pickled vegetable skewer.
A vegetarian-friendly cheese alternative will be available.
Main Course
Loaded bison burger served with poutine.
Vegetarian option: black bean burger served with vegetarian poutine.
Dessert
Hazelnut mousse or chocolate mousse, finished with a light honey drizzle.
Final dessert selection to be confirmed following a tasting.
Beer and Cider Pairings
We plan to develop suggested Locality beer and cider pairings for each course. Dessert pairing options include our Honey Lager, Mexican Hot Cocoa Porter or Cherry Sour, with the final selection determined through a tasting.
